Roasted Milk With Orange (light)

Milk roasted with orange is a typically Chilean dessert. It is similar to Spanish fried milk, although it is made in the oven. The orange is a fruit with a high content of vitamin C, flavonoids and essential oils.

Within the nutritional value, its low energy intake stands out, due to its high water content and its wealth of vitamin C, folic acid and minerals such as potassium, magnesium and calcium.

It also contains significant amounts of beta-carotene, responsible for its color and known for its antioxidant properties, as stated in the following study. It also contains a high amount of fiber and this is found especially in the white part between the pulp and the rind, so its consumption favors intestinal transit.

Vitamin C is involved in the formation of collagen, bones and teeth, red blood cells and favors the absorption of iron from food and resistance to infection. In fact, this vitamin is used to stimulate collagen synthesis in injury processes according to the following study.

The consumption of a medium orange or a glass of juice covers practically 100% of the recommendations for vitamin C. However, there are situations that increase the requirements of these nutrients such as smoking, pregnancy, breastfeeding, intense sports practice and infectious diseases and chronic inflammatory.

In these cases, the habitual consumption of oranges is particularly recommended .

It is also recommended its consumption in seasonal changes, when ups and downs in the defense system are frequent. During this time of year, you are prone to colds or infections.

Orange roasted milk recipes

This dessert is delicious, very simple and quick to make. Here we present two recipes for the preparation of roasted milk. One of them is light so you can enjoy the same flavor but with fewer calories.

1-Milk roasted with orange

You need the following ingredients:

  • 1 liter of skimmed or semi-skimmed milk.
  • 70 g of baking powder.
  • 5 eggs
  • Vanilla and / or cinnamon to the taste of the cook.
  • Peel of an orange.
  • 2 tablespoons of sugar

Elaboration procedure

The first thing is to preheat the oven to 180ºC. Next, place the two tablespoons of sugar in a baking dish and bake them until the sugar is caramelized. When it’s done, remove from the oven and reserve.

Second, in a large saucepan, beat the eggs with the yeast. Then add the milk, vanilla and orange zest little by little. You need to stir until you get a homogeneous mixture.

To continue, put the saucepan over medium heat,  without coming to a boil, for two or three minutes, stirring constantly until all the ingredients are mixed.

Remove from heat and place the mixture in the pan over the caramel. The next step is to bake for 40 minutes. After that time, take  it out of the oven and let it cool.

2-Light version of milk roasted with orange

To make the light version of roasted orange milk you need these ingredients:

  • 5 eggs
  • ½ cup of sugar.
  • 3 cups of milk.
  • 1 cinnamon stick.
  • Peel of ½ orange.
  • 1 pinch of salt.
  • 1 and ½ teaspoons of vanilla extract.
  • Grated nutmeg
  • Liquid candy.

Elaboration procedure

Start by boiling the milk with the cinnamon and orange peel for one minute. On the other hand, beat the eggs until they are well integrated.

Then remove the cinnamon stick and the orange peel and add the vanilla extract. Then pour the milk little by little over the eggs, stirring constantly.

The next step is to put the mixture in a baking dish and sprinkle the nutmeg on top. Bake for 20 minutes at 180ºC.

After the baking time, let it cool and cover with the caramel. Then put it in the fridge until it’s time to put it on the table.

These two recipes are a good way to consume oranges and thereby increase your daily intake of vitamin C. 

Go for the lighter version if you are looking to reduce your body weight.

However, these recipes should not replace the consumption of oranges as such, where all their properties are used. They must also be combined with a varied and balanced diet and regular physical exercise.
