When your children ask you what is for dinner and you answer “lasagna soup”, they will think you are lying to them, until they sit down at the table and try this invention. Who would have thought of it? We do not know. What we do know is that it will leave everyone speechless and asking to repeat.

Ingredients (for 3 servings)

  • 6 pork or chicken sausages
  • 2 shallots or leeks
  • 2 tablespoons olive oil
  • 1 tablespoon of oregano
  • 1 can of natural tomato or 400 grams of tomatoes
  • 1 pinch of sugar
  • ½ liter of chicken broth
  • Salt and pepper to taste
  • 5 plates of lasagna
  • 200 grams of mozzarella cheese
  • 2 tablespoons grated Parmesan cheese

Step by Step:

  1. Open the sausages lengthwise and remove the meat.
  2. Knead the filling and form balls about the size of a walnut.
  3. In a frying pan, heat the oil and brown the sausage balls on both sides.
  4. Remove the excess oil with a kitchen paper.
  5. Peel and chop the shallots or leeks and sauté in the remaining oil, season.
  6. Add the broth, tomato, and oregano and heat until it starts to boil.
  7. Lower the heat and let it cook for 5 minutes, covered.
  8. Cook lasagna plates as directed by package directions.
  9. Part the lasagna and add to the broth.
  10. Grate the mozzarella cheese and mix with the grated Parmesan cheese.
  11. Pour over the soup and let it melt a little.
  12. Turn off the heat and serve right away.

How about combining two of the richest foods in the world? Soup and lasagna can go well together. If you don’t believe us, try preparing this recipe.

What do you need?

  • 500 grams of minced beef
  • 2 tablespoons olive oil
  • 2 cloves of garlic
  • 1 small onion
  • 1 liter of meat broth
  • 1 cup of water
  • 1 teaspoon basil
  • ½ teaspoon oregano
  • 1 can of 350 grams of natural tomato
  • 1 can of 250 grams of tomato sauce
  • 1 tablespoon of brown sugar
  • 2 sheets of lasagna
  • 1 cup of spinach
  • Salt and pepper to taste
  • ½ cup cottage cheese
  • ¼ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons of chopped parsley

  1. First make the “cheese mix” with the cottage cheese, Parmesan and mozzarella. Refrigerate until the moment to serve the soup.
  2. Cut the onion into small pieces and sauté in the oil for 5 minutes.
  3. Chop the garlic well and add, along with the basil and oregano.
  4. Add the ground beef and stir well, cook until no red or pink parts remain (about 6 minutes over high heat).
  5. Add the peeled tomato, tomato sauce, sugar, and beef broth.
  6. Put the lasagna sheets to hydrate and cook in this mixture as well and cut into smaller pieces.
  7. When it starts to boil, cover the saucepan and let it cook for about 15 minutes, stirring occasionally.
  8. Add the spinach cut into strips.
  9. When everything is cooked, serve in individual plates or casseroles.

Another option to avoid using so much cheese is to add ricotta to the preparation before serving. You can also prepare the soup as you are used to with your choice of vegetables (carrot, celery, leek, etc.) and incorporate the already cooked lasagna sheets right at the end, before serving.

This is an interesting vegetarian option, without meat or sausages (remember to use vegetable broth). For the rest, you can innovate as you wish to enjoy lasagna soup and make it your favorite food.
