Chocolate Cheesecake

Who doesn’t love  chocolate cheesecake or chocolate cheesecake? Surely no one, since it is a real pleasure for the senses.

Therefore, below, we give you up to three different recipes for chocolate cheesecake, so you can decide which one you like the most. Although it is best to try them all.

Baked Chocolate Cheesecake

Ingredients

For the base:

  • 115 g of chocolate cookies (without filling) or type Maria without chocolate
  • 60 grams of butter
  • A few tablespoons of milk

For the filling:

  • 250 g of dark chocolate in pieces
  • 1/2 kilo of fresh cheese type Philadelphia
  • 2 eggs
  • 150g sugar
  • 1 teaspoon vanilla or cinnamon extract (optional)
  • 175 g of liquid cream to whip

 Utensils:

  • 1 bowl
  • 1 shredder or roller and airtight plastic bag
  • Some manual or electric rods
  • 1 removable mold

Preparation

Chocolate cheesecake

  • First, crush the cookies with the cinnamon or vanilla and mix them with the butter and 2-3 tablespoons of milk, until they form a paste.
  • Then, line the mold with the pasta and put in the preheated oven at 180 ºC for about 8 minutes.
  • Also, put the cream to heat and when it starts to boil add the pieces of chocolate until it forms a ganache.
  • For the mixture,  put the cheese with the sugar in a blender and beat little by little.
  • Then, add the 2 eggs at medium temperature one by one and also add a little vanilla or cinnamon.
  • Then  add the ganache and beat again at low speed.
  • Now put your chocolate cheesecake in the oven at 180 ºC for about 15 minutes and then lower the temperature to around 120 ºC, for 60 or 70 more minutes.
  • After time, take it out of the oven and let it cool without removing it from the mold.
  • Finally, when it is cold, put it in the refrigerator for about 2 hours. Check that the cake is not hot when you put it in the refrigerator, because you run the risk of breaking it.
  • You can decorate your cake with chocolate sprinkled on top.

No-Bake Chocolate Cheesecake (Super Easy)

Ingredients

  • 115 g of chocolate or Maria type cookies without chocolate
  • 60g butter
  • 110 g icing sugar
  • 120 g of liquid cream to whip
  • 150 g of dark chocolate
  • 2 tablespoons cocoa powder mixed with very little water
  • 200 g of Philadelphia type cheese
  • 1 teaspoon ground cinnamon or vanilla extract

Preparation

Chocolate cheesecake

  • To start, crush the cookies  with the cinnamon or vanilla and mix them with the butter until they form a paste.
  • Then, melt the chocolate in a double boiler and let it cool.
  • Then, beat the cream to the point of “chantilly”. Also add the chocolate and cocoa diluted in water.
  • Next, mix the cheese with the icing sugar and add it to the previous mixture.
  • Then, put the mixture in a mold and put it in the refrigerator for about 2 hours.

Chocolate cheesecake with cottage cheese

Ingredients

For the base:

  • 200 g of chocolate cookies (without filling) or type Maria without chocolate
  • 50g butter
  • 1 teaspoon cinnamon or vanilla extract (optional)
  •  A little less than 1/2 glass of milk

For the filling

  • 50 g of condensed milk
  • 400 g of cottage cheese
  • 100g sugar
  • 100 g of fondant chocolate
  • 1 teaspoon of butter
  • 2 egg yolks
  • 1 cup of coffee
  • 1 envelope of gelatin

Preparation

  • As we have already mentioned, for the first step, crush the cookies with the cinnamon or vanilla and mix them with the butter and milk until they form a paste.
  • Then, melt the chocolate in a water bath
  • Then add the butter with the egg yolks and stir until they are completely dissolved.
  • Next, add the previously diluted gelatin to the coffee.
  • When everything is well mixed, pour in the beaten cottage cheese .
  • Finally, fill a previously lined mold with the cookie dough  and leave it in the refrigerator for at least 3 hours, until it is well set.

Data of interest

You have a thousand and one ways to decorate your chocolate cheesecake. Here are some of them:

  • Sprinkling powdered chocolate on top.
  • With whipped cream in pegotitos.
  • Decorating it with colored  Lacasitos or M & M’s, if you also put Kit Kat bars around the cake and tie them with a paper bow, it will be very original. It is especially beautiful and fun for children
  • With raspberries or strawberries and a sprig of mint  in the center.
  • With chocolate noodles and / or coffee beans
  • On the other hand,  raspberry jam works great with chocolate.
  • If you put chocolate ice cream cones assembled 2 by 2, you can make it like a castle, ideal for a children’s birthday cake.
  • Finally, do not forget to present it on a tray with a nice paper lace.
