  • 30 g of butter

  • 3 tablespoons of flour (10 g)
  • 1 liter of vegetable broth
  • 50 ml white wine
  • 4 slices of baguette bread
  • 100 ml olive oil
  • 2 cloves of garlic
  • 60 gr of grated cheese

Preparation

  1. Melt the butter in a pan and add the onion cut into thin slices.
  2. Add the oil and cover for 15 minutes.
  3. Pour in the sugar and cook for about 40 minutes, stirring occasionally until everything is golden brown.
  4. Sprinkle in flour and stir.
  5. Pour in the ready-made vegetable broth.
  6. Add the wine and season.
  7. Cook with the lid on for half an hour.
  8. Meanwhile, toast the bread and spread it with the crushed garlic and a little olive oil.
  9. To serve, serve with a ladle and an ovenproof bowl.

  11. Bake for 20 minutes at 175 ° C to gratin.

Ingredients

  • 6 large onions
  • 2 tablespoons of olive oil (30 ml)
  • 60 gr of butter
  • 1 clove garlic
  • 2 liters of broth (vegetable or meat)
  • 12 slices of baguette bread
  • 3 tablespoons of wheat flour (30 g)
  • 1 teaspoon of sugar (5 g)
  • Salt and pepper to taste
  • 20 ml of cognac or brandy
  • 100 gr of grated cheese

Preparation

  1. Peel and julienne the onions.
  2. In a large saucepan, heat the oil and then add the butter to melt it.
  3. Sauté the onions and finely chopped garlic and season.
  4. Stir with a wooden spoon until the onion is translucent (it will take about 25 minutes, covered).
  5. Add the sugar, sprinkle in the flour, and keep stirring. This will help bind and thicken the soup.
  6. Pour in the cognac or brandy and leave it uncovered for 2 minutes for the alcohol to evaporate.
  7. Add the broth, season and let it cook for 20 minutes, over low heat.
  8. Cut the bread into thin slices and toast them a little. To make them taste better, you can rub a garlic cut in the middle.
  9. Place the soup in individual ovenproof pots and top with a few slices of toast and grated cheese.
  10. Bake (preheated to 200 ° C) for 6 minutes to melt the cheese.

  • 70 gr of butter
  • 1 tablespoon of flour (10 g)
  • 100 ml of white wine

Preparation
