How To Make A Banana Oatmeal Mugcake?

A mugcake is a very simple dessert to make. The trick is in the cooking time we give the ingredients in the microwave. Therefore, the margin of error is almost nil.

This is perfect for those who do not want to spend too much time in the kitchen and also for those who still need a little more practice.

Instead of being baked in the oven, like a traditional sponge cake, the mugcakes are cooked in the microwave in minimal time and the result is simply delicious.

In this sense, the only requirement is to always add at least one teaspoon of baking powder so that the preparation “rises” when cooked.

Now, although a mugcake can be prepared with various ingredients, it is recommended to use those that require a short cooking time, such as oatmeal.

The following Banana Oatmeal Mugcake recipe needs no sugar. And, although we are going to prepare it with egg and milk, both ingredients can be easily substituted in case we want to make a vegan version of the recipe.

For example, milk can be substituted for a vegetable drink and, instead of adding an egg, we will increase the amount of flour and vegetable oil a little.

Banana Oatmeal Mugcake

Oatmeal to fight cravings.

Ingredients

  • 1 banana
  • 1 medium egg (60 g).
  • 3 tablespoons of milk (30 ml).
  • 1 teaspoon of yeast (5 g).
  • 3 tablespoons of olive oil (30 ml).
  • 3 tablespoons of oatmeal (30 g).
  • Optional: Oreo type cookies.

Preparation

  1. We pulverize the Oreo cookies with the help of the processor and reserve.
  2. In a bowl, we break the egg and proceed to beat it until the white and the yolk are completely integrated.
  3. In a separate bowl, place the oatmeal and yeast. We leave a space in the center to add the milk, the olive oil and the beaten egg.
  4. We peel the banana and mash it until it becomes a puree. Next, we add it to the previous mixture.
  5. We combine all the ingredients well until obtaining a homogeneous dough, without lumps.
  6. Pour the mixture into a mug and microwave, at maximum power, for 1 minute. 
  7. After the minute has passed, we check if the mixture has already turned into a cake or not. In case it lacks a bit, we take it to the microwave for half a minute more. It should be noted that these 30 seconds are generally sufficient.
  8. Before serving, we can decorate the mugcake with a couple of banana slices.

Chocolate, cinnamon and apple mugcake

Instead of using a banana, we can use an applesauce (with a similar thickness) to make the inside of the mugcake juicier and, of course, to give it more softness.

On the other hand, the apple is a fruit that, like the banana, is very well accompanied by cinnamon and chocolate. That is why in this recipe we are going to take advantage of this healthy but sweet mixture.

Ingredients

  • A pinch of salt.
  • 1 medium egg (60 g).
  • 3 tablespoons of milk (45 ml).
  • 1 teaspoon of cinnamon (5 g).
  • 6 tablespoons of flour (60 g).
  • 1 tablespoon and a half of cocoa (15 g).
  • 4 and a half tablespoons of olive oil (45 g).
  • 8 tablespoons of applesauce (80 g).
  • 4 and a half tablespoons of chocolate chips (45 g).
  • 1 teaspoon of vanilla paste or vanilla extract (5 g).

Preparation

  1. We sift the flour. We put it in a bowl and reserve.
  2. We break the egg and beat it well. Next, we add it to the bowl with the flour and the other ingredients.
  3. So that the mugcake is well distributed, add the compote, the vanilla extract and the chocolate chips last and stir well with the help of a spoon.
  4. We pour the mixture into the cup of our preference and we take it to the microwave for 1 minute. We check if it is well done and, in case it is missing, we take it to the oven for another 30 seconds.
  5. Before serving, we can add a few chocolate chips on top and that’s it!

Aspects to consider

A mugcake is prepared to be consumed instantly. And, in the case of vegetarian versions, which contain eggs and milk, it is not advisable to store them for longer than one day. Doing so could cause stomach upset.

It is best to enjoy it as soon as it is ready. After all, this is a dessert that we want instantly, right?
