Lemon Brownie: 3 Delicious Recipes

Most people have been delighted with the taste of chocolate vanilla brownies. However,  very few have tried the delicious  lemon brownie. It is a variety of the recipe that takes advantage of the acid touch of this citrus to provide a more exotic flavor.  

As many already know,  the brownie is a typical cake of American gastronomy.  Its name refers to its dark brown color, which is  brown  in English. The traditional recipe may include crunchy nuts, peanut butter, or some heavy syrup.   

Ready to try the lemon brownie? To make things more entertaining and interesting, we want to share 3 simple recipes. Don’t stop preparing them at home!

Option 1: Lemon Brownie

This first option to make lemon brownie has a plus of flavor thanks to its vanilla and condensed milk content.

Ingredients

  • 1 cup of pastry flour (200 g)
  • 1 cup of butter (175 g)
  • 3 large eggs
  • 1 cup of sugar (200 g)
  • 1 lemon to grate
  • Condensed milk (40 ml)
  • Vanilla extract
  • Salt

  • First, preheat the oven to 180ºC and grease a baking tin with butter.
  • Meanwhile, add the sugar, flour and salt to a large bowl. Stir everything to mix well, better using a few rods. Reserve.
  • In another separate bowl, put the slightly melted butter and add the eggs, the condensed milk, the squeezed lemon juice, the grated lemon peel and a little vanilla extract.
  • Next, stir energetically with the help of a whisk to obtain a homogeneous and uniform mixture.
  • Add the flour mixture to the dough and stir little by little until you get a paste that is not too thick.
  • Pour the dough into the previously greased mold and bake it at 180ºC for about 25-30 minutes. The outside should have a crispy crust and the inside should be soft.

Option 2: Lemon Brownie

For this delicious lemon brownie we are going to prepare a simple glaze with lemon juice and icing sugar. The preparation is a bit similar to the previous one.

Ingredients for the brownie

  • ½ cup of unsalted butter (100 g)
  • ¾ cup of flour (180 g)
  • 2 large eggs
  • 2 tablespoons of lemon zest (20 g)
  • Lemon juice (20 ml)
  • ¾ cup of granulated sugar (175 g)
  • ½ teaspoon of salt (5 g)

Ingredients for the glaze

  • 4 tablespoons of lemon juice (40 ml)
  • 1 tablespoon of icing sugar (15 g)

Brownie Procedure

  • Preheat the oven to 176ºC and grease a baking tin of approximately 20 × 20 cm with butter.
  • In a medium bowl, beat together the flour, sugar, salt, and softened butter at room temperature until smooth.
  • Apart, mix the eggs, the zest and the lemon juice, until they are well incorporated.
  • Add the egg mixture to the flour mixture and beat with a mixer until a smooth and creamy dough forms.
  • Pour the batter into the pan and bake for 20 to 22 minutes or until the edges are golden brown.
  • Remove from the oven and allow to cool completely.

From the frosting

  • Sift the icing sugar and beat with the lemon juice until it forms a consistent dough.
  • Spread the frosting over the brownies with a spatula.

Option 3: Lemon Brownie

Ingredients for the brownie

  • 1/2 cup of flour (100 g)
  • 3/4 of cup of sugar (170 g)
  • ¼ teaspoon of sea salt (1.2 g)
  • 2 large eggs
  • 1/2 cup of butter (100 g)
  • 2 tablespoons of lemon zest (20 g)
  • 2 tablespoons of lemon juice (20 ml)

    Ingredients for the lemon glaze

    • 4 tablespoons of lemon juice (40 ml)
    • 8 tablespoons of lemon zest (80 g)
    • 1 cup of icing sugar (200 g)

    Brownie Procedure

    • First, preheat the oven to 180ºC and grease a baking tin with butter.
    • Next, grate the skin of the lemons, make juice with them and reserve.
    • Mix the flour, sugar, salt and butter softened at room temperature with the mixer.
    • In a separate bowl, mix the eggs, zest and lemon juice  until smooth.
    • Add this mixture to the flour mixture and beat for two minutes at medium speed, until smooth and creamy.
    • Pour into the baking dish and bake for 23 to 25 minutes until the edges are golden brown.
    • Finally, let it cool completely before covering it with the glaze.

    From the frosting

    • Sift the icing sugar and beat together with the lemon juice and zest.
    • Put the frosting on the brownie and let it dry.
