Fayuelas Stuffed With Flanin

Fayuelas, or frixuelos, are a typical stuffed dessert from Asturias and León (Spain), very similar to crepes. They are usually filled with honey, cream or fruit compotes, and the best thing is that they are very easy to prepare.

Ingredients

  • 100 g of flour
  • 60g sugar
  • 2 large eggs
  • 250 ml milk
  • 15 ml anise extract
  • 25 ml of sunflower oil

For the filling

  • 1 envelope of flan
  • 2 glasses of milk (400 ml)
  • 60 g white sugar

  • Frying pan
  • Spatula
  • Soup spoon

Preparation

For the filling

  • First, separate half a glass from the 400 ml of milk and put the rest to heat in a deep pot.
  • Then add the sugar and mix until well incorporated.
  • When the milk starts to boil add the flan envelope and stir with a wooden spoon for 1 minute.
  • Finally, once it thickens, remove it from the heat and let it cool.

For the fayuelas

  • First, sift the flour and 2 tablespoons of sugar into the same bowl.
  • Then add the two eggs and the anise extract. Beat with the mixer until not a single lump remains.
  • When it takes consistency, add the milk little by little, without stopping to stir, until you get a homogeneous and smooth mixture.
  • Next, heat two tablespoons of sunflower oil in a pan and spread it over the entire surface.
  • Then add 3 tablespoons of the mixture and cover the entire base making circular movements, being careful not to break the dough. Keep in mind that the fayuelas should not be thick.
  • When the dough starts to bubble on the unexposed side, you can turn it over, always taking care not to poke holes in the dough.
  • Finally, when it has browned on both sides, remove it from the heat and let it rest on kitchen paper to drain the oil while you prepare the other fayuelas.

    To fill them

    • First, put the fayuela on a plate and deposit three or four tablespoons of the filling. Stretch it out a bit, not going all the way to the edges to prevent it from spilling down the sides.
    • Then, take the fayuela by one end and roll it up carefully, just like you would a spring roll.
    • Finally, plate and sprinkle with a little sugar.

    • Suggested ingredients are enough for 10 fayuelas.
    • In addition, fayuelas are very popular during carnival days, or Antroxu as it is known in Bable, in Asturias. They are celebrated the weekend following Ash Wednesday .
    • Also, you can replace the flan with pastry cream if you wish.
    • On the other hand, turning the dough takes some practice. The most experienced do it by making the fayuelas fly in the air. If you don’t have this experience, you can carefully turn it over using a spatula.
    • Finally, this dessert tastes best refrigerated, so we advise you to leave it in the fridge for 15 minutes so that the filling sets better.
